However, miso soup that seems simple and easy,

Miso is also produced in Thailand and can be purchased in the supermarkets.

There are three basic ingredients needed to make miso soup:

1. Miso

2. Dashi (soup stock)

3. Ingredients

Common miso soup ingredients are simple:

miso (barley miso or soybean miso),

dashi (kelp or bonito flakes), and ingredients (vegetables, tofu, wakame, etc.).

I prepare miso soup every day using only ingredients purchased in Thailand.

When choosing these ingredients, considering their taste and flavor,

and choose according to seasonality and personal preference.

Below are the basic ingredients and cooking steps for preparing miso soup

and amount of ingredients for 4 people.

Necessary ingredients:

1. Miso: 2-3 tablespoons (10g-15g)

2. Dashi soup (kelp, bonito flakes, etc.): 800ml of water and equivalent amount

It’s more delicious to start with preparing authentic dashi stock

from kelp or bonito by yourself but to be honest, it’s bit of a hassle,

so I buy powdered dashi stock from the SUSTAINA Organic Shop in Sukhumvit Soi 39.

Supermarkets also sell granulated soup stock, so it’s a good idea to use it wisely.

Basically, any ingredients are fine.

It’s okay to use only 2 types of ingredients as well.

Cooking steps:

Step 1. Preparing dashi soup stock:

Fill a pot with water, add the kobu kelp and let it sit for about 30 minutes.

Remove the kelp just before turning on the high heat.

Just before it boils, add the bonito flakes, turn off the heat,

let it sit for about 5 minutes, and strain it through a colander.

This method is tedious to do at home, so I only do it on a special occasions.

Dashi soup is usually prepared using the following method.

Pour water into a pot, add 1 tablespoon (5 g) of dashi powder

and bring to a boil with the ingredients.

The easiest way to cook is to use powdered soup stock.

Pour water into a pot, add 1 bag of dashi stock (about 5g) and bring to a boil.

Once it boils, simmer for about 5 minutes and remove the pack.

Step 2. Add ingredients:

Pour back the stock to the pot and simmer over medium heat

for 10 to 15 minutes until the ingredients are soft.

Today’s miso soup is radish and thinly fried tofu.
The ingredients are cut.

Step 3. Dissolve the miso:

Turn off the heat.

Do not let it boil after turning off the heat.

Place miso in another bowl and add a small amount of dashi stock to dissolve.

If you find it troublesome to wash more dishes,

put it in a ladle and dissolve it with a spoon.

By following these steps, you can prepare miso soup for 4 people.

You can adjust the ingredients and their amounts to suit your preferences,
