Today I will introduce you to the Michelin-starred Maison Dunand,
located on Sathorn Soi 10 (also known as Soi Sueksa Witthaya).
Sathorn Soi 10 has recently become a hot spot with the opening of many restaurants.
It is close to the business district, so it is crowded with people every day.
Maison Dunand was opened by Chef Arnaud Dunand,
the former chef of Le Normandie, a French restaurant in the Mandarin Oriental Hotel.
Let me introduce you to the restaurant.

Chef Arnaud Dunand is a master of French cuisine from the Savoie region of France
and a leading figure in Bangkok’s restaurant scene.
Chef Arnaud Dunand’s passion for cooking began at an early age,
and his culinary journey began when he was given the opportunity to work
in some of the world’s most renowned kitchens.
In 2012, he led the kitchen at Le Normandie in Bangkok,
where he combined traditional French cooking techniques
with the finest ingredients to earn the restaurant two Michelin stars.

Maison Dunand is a house restaurant in harmony with nature,
overlooking the bustling Sathorn Soi 10.
On the premises are Maison Dunand, the one Michelin-starred restaurant
I will introduce to you today, and Alpea Bistro, a casual dining restaurant.
When you enter the entrance, you will see Alpea Bistro in front of you.
Continue to the back and you will find Maison Dunand, today’s destination.
Although the area around the restaurant is a business district with many skyscrapers,
when I enter Maison Dunand, I feel like I’ve been invited to someone’s home.
The name of the restaurant is “Maison Dunand” (=Dunand’s house),
so I feel like I am being entertained in Chef Dunand’s home.
The restaurant is not glamorous, but it has a neat and tidy beauty.
Once inside Maison Dunand, the beauty of the interior is enhanced by the soft lighting,
the warmth of the wood, and the large, bright windows.
As I sit down and look around, the beauty is even greater
and my heart is racing for the gastronomic journey I am about to experience.

Maison Dunand offers creative cuisine that stays true to
his Savoie roots while incorporating inspiration from his travels around the world.
His dishes emphasize the seasonality of ingredients,
respect for terroir, and experimentation with ingredient combinations.
He highlights local producers in Northern Thailand as well as small,
sustainable producers in Japan and France through his cuisine,
respecting the pure flavors of the ingredients.
At Maison Dunand, Chef Arnaud Dunand combines culinary fundamentals
and philosophy to present his cuisine in a sophisticated and accessible way.
Each dish has its own story, each ingredient has its own place and “raison d’etre”,
and each flavor is precisely calculated to create harmony and balance in the mouth.

A Taste of the Stars: Food Review of Michelin-Rated Maison Dunand
This time we visited during dinner time.
There are two types of dinners: a 7 course meal (4,900 THB)
and a 10 course meal (7,900 THB).
The menu is titled “Racines et Voyages” (Roots and Journeys),
suggesting that the upcoming meal is a journey.
In addition, the menu is said to change every month.
The 7 course meal excludes the “spoon symbol” on the menu,
while the 10 course meal includes all the dishes shown on the menu.
We had the 7 course because we were unsure of the amount
and seasoning and I am not a fan of cheese.
Wine pairings are also available for the dishes.
Wine pairings are available in 4 glasses (3,200 THB) and 6 glasses (4,900 THB).
My husband was the only one who ordered the wine pairing as I am not a drinker these days.
A while after we were seated, the amuse-bouche came out.
As soon as it was placed on the table,
I smelled the familiar “soy sauce” smell that Japanese people are accustomed to.
Finally, our Voyage has begins.
The first is “Ratatouille, Eel, Nettles”.
They served hot food is served hot,
and room temperature food is served at room temperature.
The warmth of the dish is simple yet elegant.
The dish has a good balance of sweetness, saltiness and acidity.
Next is “Basil, Goat Cheese”.
The rich flavor of goat’s milk is accented with basil.
Both goat’s milk and basil have their own unique flavors,
but they seem to respect and enhance each other’s individuality.
Bread is served with the meal and is homemade.
The butter is also homemade.
The butter of the day was unique, with a salty flavor,
a tomato flavor, and one with seaweed.
It is my personal belief that the better the quality of the butter,
the faster it melts, and Maison Dunan’s butter melted well.
Of course, I had them all.
The third dish is “Brittany Crab, Tagete”.
Brittany, located in the northwestern part of France, is famous for its fresh seafood.
This beautiful dish is made with one of Brittany’s specialties, brown crab.
The dish is designed as a flower garden, with seasonal flowers adding color.
My husband liked this dish the best out of the seven he had.
The fourth dish is “Oyster, Anis”.
The oysters are from Utah, France.
The anis sauce fills the mouth with the dashi broth that is so familiar to the Japanese.
The fifth dish is “Wild caught Cod, Tomato”.
It has a slightly spicy tomato flavor that refreshes the cod fat.
The red color on the right is “Momiji Oroshi (Grated Daikon Radish and Red Chili Peppers),”
a Japanese soup stock that gives the dish a Japanese flavor.
I was surprised to find that tomatoes and dashi go well together.
The sixth dish is “Mushroom, Yellow Wine”.
It is a large ravioli, but inside there are numerous mushrooms.
The aroma of truffles, including poccini mushrooms, permeates the entire dish.
The main course was “Beef Short Rib, Artichoke”.
There were two choices of main course, “Pigeon, Rocket”,
but my husband and I chose the beef.
The beef comes from Australia.
It was cooked at low temperature for 5 hours
and was so tender that it did not need a knife.
The subtle bitterness of the artichokes combines with the beef to mellow the flavor.
Our Voyage ended here and we were served a sorbet to refresh our palates before dessert.
The sorbet of the day was “Gin and Tonic and Cherry”.
The sweetness is quite restrained
and the mouth is refreshed by the eye-opening acidity and gin and tonic.
I am not a big fan of sweets and I thought this was the dessert of the day.
While we were waiting for our meal to be over, dessert arrived.
It was a bright looking “Strawberry, Buckwheat”.
The slightly sweet ice cream has the sweetness and tartness of strawberries
and the flavor of buckwheat flour.
I have had buckwheat crepes in the past,
but I have never had ice cream flavored with buckwheat flour,
so this was a new experience for me.
Thus, as we had having our last cup of coffee, the petit fours arrived.
It came in a pretty wooden bowl and was beautiful to look at.
Since we were full,
we took it home and enjoyed it with our spouses at coffee time the next day.
Thus ended my “Racines et Voyages” and I went home happy.

There does not seem to be a specific dress code,
but I think smart casual is a good idea out of respect for the restaurant.
When I visited, men wore jackets
and many women were dressed in glamorous yet sophisticated attire.

Wine pairing is 1,400 THB for 2 glasses.

There is no a la carte service.
